Vice president of product development and marketing Russ Faulk says that in 20 minutes, the new Artisan Fire Pizza Oven can get to cooking temperatures that ultimately exceed 800 degrees “so you can be spontaneous — come home from work, fire it up, make a pizza.” Kalamazoo’s technology uses two separate burners: One heats the professional baking-stone floor to cook crusts to perfection while another at the rear sends heat to the oven’s domed ceiling to cook from the top down. “You can make a thin-crust Neapolitan and then crank it up in the last minute to brown the toppings,” notes Faulk.
