Dear Becky: I watched an episode of "Victory Garden" where they used a small electric saw and shovel to completely dig out the dead part in the center of the grass and then they filled in the hole with compost. The grass should fill out the center once again. Good luck and best wishes! Monica Boutte

The usual way to divide overgrown tuberous plants is to cut into the mass anyway you can, with an ax ,awl or chainsaw, divide as much as you want and move to other places in the garden and of course, share with other fellow gardeners. I think this would work for you and your plant material.
